Maybe you remember grimacing about beets as a child, but it's time to take a second taste of this most nutritious vegetable. Beets have no fat, are high in fiber, and contain lots of vitamins A, C, and niacin.

Beets contain folic acid which is necessary for the production and maintenance of new cells and has been associated with a healthy heart. The cell benefits are especially important for pregnant woman or anyone undergoing physical healing.

Studies have also shown that beets help in preventing cancer, particularly colon cancer. Beets contain a compound known as betaine that has been shown to reduce inflammation in joints, bones, the throat and blood vessels by 20 percent. Brussels Sprouts

Brussels sprouts are easy to prepare. Just soak them in warm water. Remove and cut an "X" in the base so the core will cook evenly. Boil and/or steam until tender.

A lot of people don't like Brussels Sprouts, but they're much better when they're fresh.
